One of the best ways to enjoy a quiet night in is to sit down to a home cooked meal by soft lamp light.
Byron baked this delicious whole red snapper in an oven bag with asian mushrooms, and a deliciously savoury sauce consisting of tamari light soy sauce, white wine and coriander. The meat was fall-off-the-bone tender, cooked to perfection.
He also served a Tom Yum seafood curry with lemon grass, coriander roots, fresh ginger and pumpkin.
We dined and chatted away for a long time, savouring every mouthful,even a curious Maxi jumped up to see what all the fuss was about. We promptly removed him from the chair and gave him a boneless piece of snapper, which he ate very quickly!
I love dinner dates at home, especially when you can watch a movie in the comfort of your loungeroom and it doesn't cost $20 per movie ticket.
You can eat your $6 snapper, finish a decent bottle of Riesling for under $10 and the best part about all of this? You don't have to drive home...

Mini Quiches
They're warm, soft, creamy and perfect for breakfast, a brunch, an afternoon snack...anytime really.
They're the type of snack you can whisk up in no time, even when you think you don't have anything in your fridge... Or you don't want to run outside in the torrential rain and risk soaking to the bone for one the rogue ingredient you forgot to buy during your last whirlwind trip to the grocery store.
If you have unexpected guests, they will be more than happy with these little golden gems and if you're anything like me... You will be pleasantly surprised when you're spinning madly in the kitchen a la the Tasmanian Devil to prepare a picnic for your childhood girlfriend, only to find that your best friend (for me, this is Byron) has decided to help you by baking these splendid mini quiches to take along.
Mini (pastry-less) Quiches
1 Tbs butter
5 eggs
300ml pure cream
8 button mushrooms, finely diced
2 shallots, finely sliced
1 small handful finely chopped baby spinach
2-3 Tbs ricotta
Salt and pepper to season
2 Tbs fetta
Makes 24+ mini quiches
Whisk the eggs together, pour in the cream and whisk until combined. Add the diced mushrooms, shallots and baby spinach. Season with salt and pepper and stir to combine, then pour into the wells of a lightly greased mini muffin tin. Take care when pouring the mixture into the wells. I found it was best to fill the wells halfway, then spoon some of vegetables into each 'mini quiche', to ensure you don't end up with too much creamy egg sauce in each well. Top with a sprinkling of ricotta (this will sink a little bit, which is ideal, because it will cook into your quiches). Bake for 8-10 minutes in a preheated oven at 180 degrees Celsius.
Check your quiches after about 8 minutes to ensure they do not overcook. They should rise impressively, like puffing their cheesy chests out, and turn slightly golden. Once cooked, allow them to cool slightly in the muffin tin before serving.
Serve with a modest sprinkling of crumbly fetta (we used an Australian variety, but soft Danish fetta is good too) and a small side salad, or sans salad... I mean they're delightful without any salad embellishments and even better to share on a picnic with your closest friends. Just remember to allow them to cool before packing them away in your hamper, otherwise you may find a little bit of liquid in the bottom of the container when you unveil them later.
When you bite into these mini quiches, you will be surprised at how delicate and sponge-like they feel in your mouth. They're soft and savoury, with the perfect amount of smooth creamy filling to compliment their soft vegetable pieces.
If you don't feel like making 24 or more mini quiches, then you can halve the recipe, otherwise you can easily cover the egg mixture and refrigerate overnight. But don't worry about storing the mini quiches- I assure you, they won't last long enough out of the oven. They're addictive.

Tess's Dinner.. Creamy Spicy Mushroom Pasta
This is definitely worth blogging about...
In the last days of Autumn I was invited by my friend Tess to join some friends for dinner at her beautiful home.
It had been raining but stopped just before we arrived so the street had that dark glittery wet sparkle. It was very beautiful, however absolutely freezing so we hurried to the front door, where we were greeted by Tess's friend Jeremy, and guided towards the delicious aroma coming from the kitchen.
Tess lives in a house with a lovely open kitchen, with an island bench that we crowded around nibbling on brie and sipping wine as she busily worked chopping basil and chilli, whilst smiling of course.
She took us on a brief tour of the house as the creamy sauce bubbled gently...
I was particularly interested in this light in her room.
Her fridge magnets... Yes it does say that... Really!
... And the shadows on the window in the dining room as cars passed on the street outside...
It is one of my favourite things to do, to watch someone cook in their own kitchen. For me it's like watching ice-skaters at the Winter Olympics- So much time and care to make something look so effortless and beautiful.
We continued chatting as Tess served our meal, then we ventured into the lounge room to watch a funny Australian show, Angry Boys.
After dinner, I had a jam on the piano with Jar and experimented with the HD video function on Mr Canon.
High-definition video and quality wine-infused conversations...
Our evening was filled with all the delicacies you would expect from such a cool hostess.
There was this cheese platter to nibble on...
White Russians with some strange but tasty vodka...
Combined with a lot of pasta.
I had a square or two of this rather interesting sea-salt chocolate.
Trust me you either like it or hate it and I LIKED it!
A dash of wine...
Some piano interlude...
Some more wine...
Lots of joking, great company...
...And some more wine...
All this combined to make a perfect evening with good friends Tess and Cyndy.
